I reckon you should some of these seats.  I got them out of a Proton Satria GTI hatch back.
I reckon their pretty good match to period recaaros,  and would suit escort Mk1 or Mk2.
Easier to find than some other seats.
They have the tilt mech for 2 door cars, and I reckon the rear seat might even fit depending on how much modification  you want to do.
Standard fabric is pretty nuetral in style.

I got these seats off gumtree for $450 for the pair.
Protin Satria GTI was the car.
I got them for my sons mitsubishi lancer as they drop straight in. The proton being essentially a malaysian mitsubishi.
The seats are recaros, I think LX generation 2.
I reckon they coudl fit pretty easy into the escort. The rails wouldnt need much to get them to fit.

I have some low backs in black if you are interested.

    One pair on there own,

Or one complete interior, low backs, back seat and door cards without speaker holes all in black black to suit 2 door coupe. Will not part out the later.

    Some pics,

Vinyl interior to suit 2 door, front buckets and rear seat, unmarked door cards, plastic floor sliders and tunnel seat fastners.

Need some work were the covers attach to the frame and the drivers seat has come away where the back meets the lower seat section.

And cloth interior with vinyl back, aslo to suit 2 door, 2 buckets and rear seat.  Has been dyed/spray black, top of rear seat has some tears, mechanism on bucks not complete, however no tears on seated sections.
