ITs time to start again.. Mk2 Pv Restoration

A life time ago this old eski was my pride and joy... after about 7yrs of neglect and nagging by the parentals to clean there yard up, its time to put life back in to old dog.
 
So with any luck ill begin the slow road to recovery very soon.
 
But im very interested to find out what classic enthusiasts like to see when fixing up an old car. My self, I want to keep as much heritage in the vehicle as I can, however I also believe that modern technology shouldn't be ignored.. ( basically i just hate how much maintenance and effort carbis' and dizzies' are compared to electronic ign and injectors.)
 
So what are the do's and donts. What experiences have people been through that that wouldnt wish upon there worst enemy?
Are there favourite conversions, hated conversions, rediculous or superb. Obviously each has there own opinion, but thats what i want to see.
 
I expect a lot of research ahead of me and a lot of decision making. I deffinately have my own ideas in mind.
But im curious as to what you would do?
 
Plus cmon wants the point of being through it all if you can give advice and after all it is ignored you get to turn around and say
"I told You SO!"
