The eccentric tops you can buy are only eccentric a few mm so you won't be able to achieve wild settings unless combined with lower conrol arm (LCA) adjustments too...
Caster is good for high speed cornering...No downside to caster, unless you worry about wearing the edges of your tyre, I still prefer the performance...
.....Back to your query. Get on the wheel alignment machine and see what you can achieve. I set my struts in the middle of the tower (call this neutral)...See what the settings are.
Now hopefully they both are close to being the same. Decide on what you prefer and need. Try for more caster than camber, say 1-2 camber 2 caster may be possible, just plucking a number out of the air...
I have 6 degrees caster / 3 degrees camber and happy...To get this the custom strut tops are 45mm eccentric, but in total settings due to geometry are approx (30mm back and 30mm in from the original centre location)...The strut is shorter to allow for this and fit under the tower...
