I have pacemaker big bore extractors, and its for fast street.
The old had muffler and hot dog,
Exhaust i was  thinking 2 1/4" and recommendations.

Depends what has been done to the motor really.  I certainly would go bigger than that. Even my track car with about 190 HP (flywheel) only has 2 1/4".
 
Something worth requesting from the exhaust shop is to make the cross over from the headers on the drivers side to the muffler in the passenger side as gentle and straight as they can. The factory design has 2 almost right angle bends which is pretty ordinary and with all the pacemaker pipes i and mates have had break over recent years i think this is a contributing factor.

is one muffler and hot dog still used or like the retro ford one rear muffler?

2 1/4" should be fine, just don't skimp on the mufflers, their important, go for a pair of  'quality' SS straight through mufflers. You will find they won't produce too much back pressure like a chambered muffler does  yet will reduce the noise effectively.

Yes 'wouldnt' was what i meant.  Damn fat fingers!
 
The resinator at the back wont make it any quieter but will usually take out a bit of 'bark' and drone.  If its a road car i would fit one
