I had a 71 GT V6 capri for a while, that had the blackouts.
Both were true matt black, but given the car was 30+ years old already, they general paint quality was pretty degraded by then. I ended up fitting the bonnet to my 16oo, and sandign through the blackouts was fun, it wasnt paint anymore, totally baked hard.
If it was me, I'd be doing satin, only because I like things shiny and I think its easier to keep satin clean. With Matt black, if you get any polish on it, its noticeable straight away and IMHO it only looks good for 10 minutes after spraying. You might lose some concourse points, but much more liveable.
