Overheating while driving around or idling? Or both? How hot is it getting?

Both. It gets to about 3/4 in under 10 minutes then i turn it off before it gets any hotter

At this point You really need to confirm the actual temperature, you may have faulty gauge/sender.
Cheers

Buy a laser temperature reader.  Cheap then at least you will know what the real temps are.

Haven't got an air bubble or something in the system do you? Water flowing through ok?

Running with out a thermostat allows the water to flow through the radiator to quickly not giving time to cool. The thermostat slows the water so the radiator can do its job.
