can anybody help with jet/choke size for a single 40dcoe weber onto a 1600 crossflow mk 2 escort.

Don't do it....the 1600 DCOE manifolds don't slot well.  You would be better off going with a late model down draught webber or twin DCOE's

+1, not a good combo
 
But if you really have to, starting point
32-34mm choke (depending on cam size, larger choke for bigger cam)
F2 emulsion tube
135ish main
185ish air
35-40mm pump with 0 bleed
45F8 idle (smaller cam) 45F9 idle (larger cam)
 
As always, a starting point.  Best to find a good dyno man with lots of weber bits and get it 100% afterward
