How is the body condition and what are you wanting from the Escort?
If you are mainly interested in making some coin from it now and the shell is pretty good, tidy it up to get it roadworthy and move it on. Sorting standard mechanical components if you can do it yourself is fairly cheep.
A resto. and or modifications will cost you, things like rubbers, seals, interior trim etc. all add up let alone the time to do the job. Then if you put flared arches you will want an engine to match $$.
If you are keeping it then build the car of your dreams and enjoy it.
Or just leave it in the shed for another day!
