Hi Whooligan,
You are correct with what you are saying.
In your example you are highlighting "purchasing" and "buying". (relating to the purchaser)
The dynamic opens up if the seller is also considered who wishes to maximise his price.
This then becomes the art of negotiating between both parties.
 
Theory aside, I think $35k is a reasonable and fair amount to pay if the car is complete and well kept.
Anyone who has restored a car will know the real dollar price and time price of a restoration.
Often $35k can be absorbed into paint and panel and basic mechanical work alone before other factors are included.

Whooligan get the book You can negotiate anything by Herb Cohen, it will help you with your overpaying and help you when its time to be a seller as well. 
 
I agree it's a fair price for a properly restored car, so let's hope it was done right and that the buyer is one happy capri owner.

I believe its all about the quality.
Also the black one on gumtree appears to be a four cylinder shell.

Why?  Engine bay corner brackets are correct, brake lines correct, battery location correct, radiator correct...what am I missing?
Quality looks just as good. Not 100% original but neither was the white one.  New paint, nice wheels, nice interior, chrome all good, more desirable manual, registered and $16k cheaper.

You'd need to see a few more pictures to verify the black car was a genuine v6, it does look nice though.
