When I did my first rebuild had a book called "Rebuilding and Tuning Ford X-flow and Pinto Engines (See pic).
That and the Gregory's manual was enough to get the job done.
Having a spare engine that you can pull apart and take notes and photos (lots of photos) as you go along is very important as you'll learn much from pulling it apart.
I also got a cardboard box and when I took off a bolt I would push it into the box and write where the bolt came from to ensure I used the right bolts in the right location.
