My partners Mk2 Escort 1.6 Manual keeps wanting to stall when brakes are applied. Been searching and reading the manual for hours and cant seem to figure out what's wrong... Please help any advice would be amazing. only thing we can think of is maybe the fuel mixture or something wrong with the carb.

Float may be set incorrectly or maybe an issue with the brake booster and vacuum.

Had this on a 1600 capri single barrel, it was the needle and seat.  If its braking though, check your booster

Does it do it at standstill if you put your foot on the brake with the engine idling? If so with the engine stopped disconnect the vac hose at the booster (other end goes to inlet manifold) and plug it. Start the car and use the brakes and see if it still occurs. If it does it's the booster.

Brake booster diaphragm has a split which when you brake it releases the air causing the motor to lean out and stall. Paul has the right idea..

Is the Brake booster diaphragm able to be easily replaced, without special tools,
& from where may it be sourced.??

Yes, it can, but get a brake shop to do it for you as special tools are needed, the booster casing is under great pressure.
