Luke
Im in the process of setting up my front end.  I seem to be chasing my tail a bit.
I have adj tca, strut tops and swaybar so I dont have any set points to work from.
Where is the best place to start taking measurements to get it all square?

Just take it to a suspension place.  For the sake of $80 or so you'll get exactly what you tell them you want.

Cheers,

Does anyone know any suspension guys/gurus in Sydney/NSW who are experienced with small fords (escorts)?

set the lower control arms to the same length on the bench, best set them to standard length to start.
install the struts so that the compromise between cambver and caster is the same, ie set the centerline towards the inside and rear. then adjust the swaybar so that the arm is all the way forward. Now check wheelbase against rear wheels on both sides (assuming diff is in straight) and adjust as necessary. check wheels on partial/full lock dont impact against body, adjust as necesary and check wheelbase against rear wheels on both sides.
once cars is square check tow in out on front then set camber and caster at strut top.

Or get a wheel alignment!
