The 79/80 gregorys manual shows the air con in the wiring diagram, you should be able to trace it back to most of the parts required. Apparently the factory ford manual from 1977 shows a bit more of the a/c but I haven't found that book yet so can't say either way. What sides your compressor on? Inlet or exhaust? I've got pics of both if you need them. A/c cars should have factory tint aswell, 'tinted' will be stamped under the logo on the top of the window. These are hard to get in the two door, not so hard in four door as ghia windows are tinted too.

I haven't seen the compressor, but I have photos of the dryer, condenser and the double crank pulley and hoses attached to the water pump housing piping tapped into bottom of radiator. Inside the car there is a hose resting on  the passenger foot well, no signs of a dash control or anything, just a mess where something used to be fitted. That looks like an aftermarket kit fitted to a escort, seen a few over the years, usually fairly rough installation
the factory unit is combined with the underdash panels with the controls on an integrated panel. The aftermarket units usually take out the glove box for the blower and evaporator .
The Factory Ford escort 1977 manual shows many of the factory parts with a legend showing the ford part numbers.

I have what I beleive is a factory under dash console for the A/C unit. It replaces both the glovebox and the centre console (the one that houses the ash tray normally). I also have the control and panel that goes in the gearstick console - this covers over the "hole" area in front of the gear stick and the area where the clock was in RS's and Ghias. This dash piece has 2 rectangular vents in it for the A/C and had a "digital" clock (rolling drum style). I'm not sure if it was ford AUS or UK, but it was very well made. This car had the battery in the boot that also appeared to be a factory install.
 
I'll try to remember to send some pictures of this stuff tonight - you folks might find it interesting.
 
This all came from my first esky which was a 78 Pine-n-lime rally pack that seemed to be fitted with every option you could get. Spotties, A/C, mudflaps, sports suspension (22mm bar front and rear bar), volantes. I bought it in 1985 and still have some of the bits.

Hey Ash, yeah that's the factory type, the air vents are actually TE Cortina, the clock Fairlane, they mixed up the parts a bit to make them but they are pretty neat. What side was the compressor on? Trying to work out whether it was just the ones on the inlet side that had the battery in the boot, can't see why the exhaust side setup would need it, but unsure, any pics would be good.....

Sorry, when I bought the car the A/C was not working and missing the compressor (which apparently is why I got the car cheap!), so I dont know where it was mounted. My guess would be inlet, as it had a standard alternator bracket which I would have thought would have been custom if compressor was mounted on that side too.
 
Sorry, forgot to take those photos last night - was getting ready for rallysprint tonight.
