Whats the spec of the engine? 
I would think the 40dcoe would give better.. but if only the 32/36 is required (depending on spec of engine) then you wouldn't bother going to the other..

It's a 1600 xf with 9:1CR & 234 cam.

With that spec id just stick with the 32/36. It would work fine with no disadvantage..
But if you really wanted the DCOE there's no reason why you couldn't use it.

I have both types of carb, and the DCOE will be the easiest to use because it's already set up & running in my car (with a reconditioned head) , just need to remove it left attached to the head and bolt onto spare performance bottom end I have. I'll be ordering head gasket tomorrow, can't wait to get it all running. Will need bigger jets for the DCOE.

Just make sure if you're fitting the DCOE that the manifold is the "even pulse" type (eg: lynx style), otherwise you'll be wasting you time with it, the 32/36 or 38/38 will work heaps better.

I just stumbled across a link about carburettor CFM.
 
It says the 32/36 DGV has 255 CFM
40DCOE with 36mm chokes has 175 CFM per barrel.
 
Another interesting article I found said that DGV webers don't distribute the fuel evenly into each cylinder which explains why I have different coloured carbon build-up on a cylinder head that I recently removed. I'm looking forward to comparing it with my DCOE head when it comes off.
